Casual Italian Gastropub Prepares to Dazzle Hudson Valley With Modern Cuisine, Cocktails
Though the co-owners of this unique new Italian restaurant in Poughkeepsie have individually been in the business more than 15 years each, they've always dreamt of opening a restaurant together, and now that dream is becoming a reality.
Spettro Restaurant Poughkeepsie Prepares For Grand Opening Friday December 1st
Almost ready to open their doors to the public for the Grand Opening this Friday, December 1st, Spettro restaurant is located at 44 Lagrange Ave, Poughkeepsie, NY and will be a 'casual Italian Gastropub serving up modern cuisine and unique cocktails.'
According to co-owners Giovanni Ilardi and Michael Purcell, who are embarking on their first restaurant together, the main goal is to provide the best food, drink & hospitality in the area.
If you're wondering where the little ghost on the Spettro logo is from, well, settle in for a little language lesson, as the name 'Spettro' comes from the British English word, Spector, which means Ghost in Italian.

What Can We Expect at Spettro When It Comes To Food & Drink?
We already know that Spettro has Italian influences, with the 'Italian Gastropub' classification, but let's take a deeper look at what visitors can expect on the menus.
At lunch, their main focus are Italian bites, pizzas, salads, sandwiches, and perhaps something you've never tried before panuozzos, aka a pizza sandwich.
Panouzzos are fresh, house made pizza dough, drizzled with extra virgin olive oil and folded to be a vessel for sandwiches They will be a definite staple at lunch!
When it comes to the dinner menu, things will be completely separate from lunch with a focus on pizza, unique pastas and traditional entrees with a twist like Cacio e Pepe with Pink & Black Peppercorns and Bucatini Pistachio Pesto.
In addition, Spettro will be offering Sunday brunch with breakfast pizzas and traditional Sicilian recipes.
Not to be forgotten, the drinks! Drink offerings will feature local craft beers and curated Italian reds, whites & sparkling. Outside of beer and wine, Beverage Manager Amelia Bucher has put together a cocktail menu that is mainly Amaro based where 'each cocktail is approachable yet unique.'
